Meet Our Beloved Chef: Tabba Conrad
Tabba's culinary journey began at a young age, under the nurturing guidance of Ella, a cherished family friend and neighbor. Ella's kitchen was Tabba's first school of gastronomy, where she learned the art of creating everything from scratch, from biscuits to creme puffs, croissants to pies, all from tree to plate. Ella instilled in her the wisdom of preparing every type of gravy, mastering meat cleaning and preparation, and transforming even the toughest cuts into mouthwatering perfection.
Ella's kitchen was a place of precision and thoroughness, where Tabba learned to do things right and quickly, always guided by Ella's watchful eye and expectation of excellence. “"Learn to do it quick, come on now girl!" She'd say as I mastered the techniques she quickly taught with no repeats without a look and a huff or grunt or comment.” This early training laid the foundation for Tabba's culinary prowess.
Tabba's culinary journey continued on the West Coast when she joined friends in opening "The Ruby Dragon," a fully organic, vegan food cart in SE Portland, Oregon. Here, she honed her skills in preparing Thai curries featuring local organic tofu and fresh, seasonal vegetables. Their extensive breakfast and all-day vegan brunch menu became a local sensation, attracting long lines of eager patrons.
Her journey led her to downtown San Diego, where she prepared meals for 150 people, emphasizing balance, nutrition, and affordability. These free meals nourished guests from all corners of the globe, forging connections and creating lasting friendships.
Tabba's culinary adventure also intertwined with the family of both Cafe Gratitude and their sister vegan restaurant S.A.G.E, where she witnessed the evolution of their menus and restaurants. Their innovative approach to vegan cuisine inspired her to experiment with new flavor combinations and techniques.
Beyond her personal culinary exploration, Tabba learned from Mayan chefs in the Yucutan, connected with the Shipibo tribe in the Amazon Jungle, and gained insights from Incan indigenous elders and farmers in Urubamba, Sacred Valley, Peru. She also gleaned wisdom from Quechua indigenous families in the Andes Mountains.
Tabba's food philosophy revolves around mindful dietary choices, prioritizing freshness, locality, and organic quality whenever possible. Her dishes are infused with thoughtful preparation, artistic presentation, and, above all, love.
